First up – Sweet Potato White Bean Burgers
This recipe is healthy and fun alternative to typical black beans burgers. Best of all, they don’t require a bun. I topped mine with a little dollop of avocado and ta-da a perfect burger was born.

Next up – Easy Falafel
Falafel are a great, easy vegetarian appetizer or even a main dish. I dipped mine in red pepper hummus to give it a little extra kick. This recipe is easy and cheap to make, plus it is delicious!
And lastly, Creamy Avocado Pasta!
This creamy avocado sauce is great because not only are you sneaking an extra vegetable serving, but it such a refreshing breakaway from the usual tomato sauce. It’s the perfect, healthy way to spice up your gluten-free pasta. Also, the nutritional yeast gives the dish some extra vitamins and protein.
